Andhra Style Gongura Mutton Curry Recipe
Gongura leaves or sorrel leaves are a specialty of Andhra Pradesh. These leaves are sour in taste and are of two varieties - ones with white stem and the other with red stem. The leaves with red stems are sourer than the one with white stems.
Andhra cuisine is famous for its use of variety of spices and leafy greens in the preparation. The gongura mutton curry is recipe is actually a variation of the normal Andhra mutton curry. It does not use too many spices which lets the flavour of the gongura leaves come out very well. It also gives a mild tangy taste to the mutton curry which makes this mutton recipe all the more irresistible.

All you need
- Gongura leaves- 1 bunch (chopped)
- Mutton- 1/2 kg
- Onions- 2 (chopped)
- Green chillies- 2 (slit)
- Ginger-garlic paste- 1tbsp
- Turmeric powder- 1tsp
- Red chilli powder- 1tsp
- Salt- as per taste
- Garam masala powder- 1tsp
- Jeera (cumin seeds)- 1tsp
- Green cardamom- 3-4 pods
- Cloves- 2-3
- Cinnamon- 1 stick
- Oil- 4tbsp
- Coriander leaves- 2tbsp (chopped for garnish)
Procedure
1.
Wash
the
gongura
leaves
properly
with
water.
Then
heat
two
tablespoon
of
oil
in
a
pan
and
add
the
gongura
leaves
to
it.
2.
Cover
and
cook
the
gongura
leaves
on
medium
flame
for
4-5
minutes
till
they
become
mushy.
Switch
off
the
flame
and
keep
it
aside.
3.
Then
heat
oil
in
a
pressure
cooker
and
add
the
jeera
seeds,
cloves,
green
cardamoms,
cinnamon
and
allow
it
to
splutter.
4.
Then
add
the
onions
and
green
chillies.
Cook
on
medium
heat
for
4-5
minutes.
5.
Add
ginger-garlic
paste,
turmeric
powder,
red
chilli
powder,
mutton
pieces
and
saute
for
5-6
minutes.
6.
Then
add
salt
and
mix
well.
Cook
for
3-4
minutes.
7.
Now
add
a
cup
of
water
to
the
mutton.
Cover
the
cooker
with
its
lid
and
wait
for
4-5
whistles.
Keep
the
flame
low.
8.
After
the
mutton
is
cooked,
tranfer
it
to
a
pan
and
cook
on
low
flame.
9.
Mash
the
gongura
leaves
with
a
pestle
or
masher.
You
can
also
grind
it
in
a
mixer.
Add
this
to
the
mutton
gravy
and
mix
well.
10.
Cover
and
cook
for
3-4
minutes.
Add
the
garam
masala
powder
and
switch
off
the
flame.
11.
Garnish
the
mutton
with
chopped
coriander
leaves.
