Lobster Soup
Boil the lobster lightly, leave the meat a little uncooked. Remove the meat, tomalley and coral after waiting for the lobster to cool and cracking the shell. A savoury broth can be made by boiling the shell in water. Strain the water to remove the shell and add herbs, flavouring and spices to suit your taste.
