Delicious Vegetable Dal Recipe

No Indian meal is ever deemed complete without having a bowl of dal on your plate. You may not have a lot of curries with your chapati, but if you have a bowl of dal, you can have a hearty meal without complaints. Since dal is such an important side dish of our every day diet, it is cooked in a variety of ways too. From simple boiling to making it aromatic with spices, dals can vary as per taste and likes.

Interestingly, dal can also be used to prepare some special non- vegetarian recipes. The twist of dal when combined with meat or fish makes it an utter delight for the taste-buds of the non-vegetarian foodies. As we cannot really manage eating without a serving of dal, we thought to provide you with some sumptuous dal recipe. As the market is filled with seasonal green vegetables, here is a dal recipe using some vegetables. If you are on a diet, you can have this healthy and filling dal.

Dal With Vegetables: Side Dish Recipe

Delicious Vegetable Dal Recipe

Serves: 2
Preparation time: 10 minutes
Cooking time: 30-35 minutes

Ingredients

1. Moong dal- 2 handful
2. Toor dal- 2 handful
3. Onion- 1 (chopped)
4. Carrots- 2 (chopped)
5. Green beans- 8-20 (chopped)
6. Green chillies- 3 (chopped)
7. Garlic- 6-7 pods (minced)
8. Tomato- 1 (chopped)
9. Turmeric powder- 2tsp
10. Red chilli powder- 1tsp
11. Garam masala- 1tsp
12. Cumin seeds- 1tsp
13. Bay leaf- 1
14. Dry red chilli- 1
15. Salt- as per taste
16. Lemon juice- 1tsp
17. Ghee- 1tbsp

Procedure

1. Wash both the dals in tap water until clean. Soak in water for 25-30 minutes.
2. In a pressure cooker, add the soaked dal with water and then sprinkle salt and turmeric powder.
3. Pressure cook for the duration of 3-4 whistles. Once done, keep the cooker aside and let the pressure release.
4. Meanwhile, heat ghee in a deep bottomed pan. Season with cumin seeds, bay leaf and dry red chilli.
5. Saute onions on a medium flame for about a minute. Add carrots, garlic, green chillies and green beans. Now saute and cook on a medium flame for 3-4 minutes. Sprinkle a little turmeric powder and salt as per taste. (remember not to add extra salt as you have added in the dal).
6. Add tomato and mix well. Cook for another 4-5 minutes.
7. Open the lid of the pressure cooker and beat the dal to mix it evenly.
8. When the vegetables become tender, add red chilli powder, garam masala and pour in the boiled dal.
9. Stir well and bring it to boil. If you want the vegetable dal to be semi-thck, then add a little water or else just boil for a few minutes and put the pan off flame.

Sprinkle lemon juice and mix. The vegetable dal is ready to eat. Serve it hot with roti or with rice and sabji.
