Yummy Soybean Kofta Recipe

We all know the health benefits of soy products. Soya beans is one of the soy products that we always consume. This spongy balls can be included in the menu for any meal. Soybean kofta is one easy recipe that has a wonderful blend of spices and seasonings. Soybean kofta is made with spices like garam masala (constitutes cardamom, cinnamon, cloves, cumin seeds, peppercorn, star anise, coriander seeds, bay leaves and mace powder). Ingredients

For kofta:

  • Soy granules- 100gms
  • Boiled potatoes- 1 cup
  • Besan- 1tbsp
  • Ginger- 1 inch (grated)
  • Green chilli paste- 1tbsp
  • Salt- To taste
  • Oil for frying

For gravy:

  • Onions- 2 (chopped)
  • Ginger garlic paste- 1tsp
  • Tomato puree- ½ cup
  • Fennel seeds- ½ tsp
  • Milk- ½ cup
  • Turmeric powder- 1tsp
  • Red chilli powder- 1tsp
  • Salt- To taste
  • Garam masala- 1tsp
  • Cumin seeds- 1tsp
  • Water- ½ cup
  • Oil- 1tbsp
  • Mint leaves- 1 pinch (chopped)

Procedure

  • Soak soy granules in hot water for 8-10 minutes. Squeeze out water from the soya granules and keep them aside.
  • Combine all the kofta ingredients in a medium sized bowl and add the soaked granules. Make a dough out of it. Do not add water to make the dough.
  • Heat oil in a deep bottomed frying pan. Divide the dough into 10-15 equal portions. Make round balls and deep fry them till they become golden brown in colour. Drain and keep them aside.
  • Heat oil in a skillet. Sprinkle cumin seeds and cook the chopped onions. Saute on low flame till they become tender and golden brown. Add the ginger and garlic paste and cook for a minute.
  • Now add turmeric powder, salt, tomato puree, fennel seeds, red chilli powder, garam masala and mix well. Cook on medium flame till the oil separates from the gravy.
  • Pour in milk and water. Stir well. Bring it to boil and cook for 3 minutes. Now simmer and cook for 4-5 minutes so that the gravy thickens. Take the pan off flame once the gravy thickens.

Soybean kofta is ready to eat. Garnish with mint leaves. Serve it hot with boiled rice or rotis.
