Soya n Coconut Curry For Pregnant Women

Pregnancy is a crucial time for women. During this time the expecting mother should be very careful about her diet. It is not that cooking for pregnant women is difficult in any way. But one has to keep in mind that the diet of a pregnant woman should contain dishes which are full of nutrients. A nutrient rich diet is important to keep the expecting mother and developing baby healthy.

Since the baby is completely dependent on the mother for nourishment, the mother's diet becomes crucial. A pregnant woman's diet must contain a balance of all the nutrients like vitamins, minerals, fibre, proteins etc. Here is a vegetarian recipe of soya and coconut curry for the expecting mothers. This dish is simple, easy to digest and is laden with important nutrients like phosphorous, protein and fibre. Apart from being healthy, the dish is extremely delicious and tempting.

Soya n Coconut Curry For Pregnant Women

Ingredients

  • Soya granules- 2 cup (soaked in warm water)
  • Coconut- ½ cup (grated)
  • Onions- 2 (chopped)
  • Tomatoes- 2 (chopped)
  • Mustard seeds- 1tsp
  • Fennel seeds- 1tsp
  • Turmeric powder- ½ tsp
  • Garam masala powder- 1tsp
  • Curry leaves- 5-6
  • Salt- as per taste
  • Oil- 1tbsp
  • Coriander leaves- 2tbsp (finely chopped)
  • Water- ½ cup

Procedure

  1. Drain the water from the soya granules completely. Keep it aside.
  2. Heat oil in a pan and add mustard, curry leaves and fennel seeds. Fry for a minute.
  3. Add onions and saute on a medium heat for about 4-5 minutes.
  4. Then add the chopped tomatoes, turmeric powder, garam masala powder and cook for 2 minutes.
  5. Now put in the soya granules and mix well.
  6. Mix in the grated coconut, salt and cook for another 3-4 minutes.
  7. Add water and cook for 5 minutes.
  8. Once done, switch off the flame and garnish with chopped coriander leaves.

Soya and coconut curry is ready to be served. Enjoy this delicious dish with rotis or parathas.
