Parwal Do Pyaza Recipe

Parwal is a vegetable from gourd family. This vegetable is tasty and healthy too. It is an excellent source of carbohydrates, vitamin A and C which is very essential to boost your immunity during the winter season. It can be prepared in many ways.

Today I have made a parwal do pyaza where it is cooked with lots of onions and spices.

This dish tastes extremely delicious due to the variety of spices added to it and the sweet flavour of the onions.

Parwal Do Pyaza Recipe

Here is the recipe.

Serves: 5
Preparation time: 15 minutes
Cooking time: 20 minutes

Ingredients

  • Parwal/Pointed gourd- 8-10
  • Oil - 4 tbsp
  • Dry red chillies - 3-4
  • Black peppercorns- 5-6
  • Cloves- 3-4
  • Black cardamom- 1-2
  • Green cardamom- 2-3
  • Cinnamon- 1 inch piece
  • Onion- 2 cups (thinly sliced)
  • Ginger- 1 inch piece (crushed)
  • Garlic- 5-6 cloves (crushed)
  • Tomato puree- 2tbsp
  • Thick yogurt- 2tbsp
  • Coriander powder- 3tsp
  • Turmeric powder- ½ tsp
  • Kashmiri red chilli powder- 2tsp
  • Roasted cumin powder- ½ tsp
  • Garam masala powder - ½ tsp
  • Salt to taste lemon juice- 2tsp
  • Fresh coriander to garnish

Procedure

  1. Wash the parwal and peel into alternate stripes.
  2. Cut it into 2 pieces and remove any hard seeds if there.
  3. Add parwal in a pan and add ¼ cup water.
  4. Cover and cook till parwal are little soft.
  5. Add oil in a heavy bottom pan.
  6. When the oil is hot, add dry red chilies, black peppercorns, cloves, black cardamom, green cardamom and cinnamon.
  7. Fry for 20-30 seconds.
  8. Add onions and fry till pinkish .
  9. Add ginger and garlic and fry till onions are golden brown.
  10. Add tomato puree and yogurt and cook for a minute.
  11. Add coriander powder, turmeric powder, red chili powder, cumin powder, salt and garam masala.
  12. Add half cup of water and cook for 1-2 minutes.
  13. Add the parwal and mix well.
  14. Add another ¼ cup of water and cover the pan.
  15. Cook the parwal on very low heat for 10-15 minutes till done.
  16. Add lemon juice and mix.
  17. Garnish with fresh coriander.
  18. Serve hot with phulka or rice.
