Masala Tinda: Tasty Vegetarian Recipe

Tinda or apple gourd or the baby pumpkin is a popular vegetable in the Northern part of India. Apple gourd is a less known vegetable, but it has numerous health benefits. It contains antioxidants and anti-inflammatory agents which are very effective in bringing blood pressure under control, prevent heart diseases and cancer.

With all these benefits and a simple recipe to cook tinda, there is no reason as why you should not include it in your menu. Masala tinda is a simple and quick recipe. The apple gourd is cooked with a blend of spices and yogurt which makes this vegetarian recipe an absolute delight for your taste-buds.

Ingredients

  • Tinda (apple gourd)- ½ kg
  • Yogurt- 1 cup
  • Ginger-garlic paste- 1tsp
  • Cumin seeds- 1tsp
  • Coriander powder- 2tsp
  • Cumin powder- 1tsp
  • Red chilli powder- 2tsp
  • Turmeric powder- 1tsp
  • Garam masala powder- ½ tsp
  • Salt- as per taste
  • Oil- 1tbsp
  • Water- 1 cup
  • Coriander leaves- 2tbsp (finely chopped)

Procedure

  1. Peel and wash the tinda with water. Cut it into 4 halves.
  2. Heat oil in a pan and add cumin seeds to it.
  3. Once the seeds start spluttering, add the diced tinda. Fry on a medium flame for 3-4 minutes.
  4. Add ginger-garlic paste and fry for 2 minutes.
  5. Add cumin powder, coriander powder, turmeric powder, red chilli powder and cook for 3-4 minutes.
  6. Beat the yogurt in a bowl and add it to the pan. Mix well.
  7. Add salt and cook for 3-4 minutes.
  8. Now add water, cover and cook for 8-10 minutes on a low flame. Keep stirring occasionally.
  9. After that, check the tinda with a fork if it is completely cooked.
  10. Once it is cooked, add garam masala powder and mix well.
  11. Switch off the flame and garnish with chopped coriander leaves.
