Lauki Ki Sookhi Sabji Recipe

Lauki Ki Sookhi Sabji Recipe

Today we have a lip-smacking recipe of bottle gourd which will definitely help you to develop a liking for this vegetable. Lauki ki sookhi sabji is actually a dry side dish recipe which tastes extremely delicious. The bottle gourd is cooked with spices which makes it tastes simply divine.

Ingredients

  • Lauki (bottle gourd)- 1 (large, diced)
  • Onions- 2 (chopped)
  • Garlic- 5 cloves (chopped)
  • Ginger paste- 1tsp
  • Green chillies- 2 (slit)
  • Turmeric powder- ½ tsp
  • Red chilli powder- ½ tsp
  • Cumin powder- 1tsp
  • Coriander powder- 1tsp
  • Garam masala powder- 1tsp
  • Amchoor (dry mango) powder- 1tsp
  • Kasuri methi- 2tsp (crushed)
  • Cumin seeds- 1tsp
  • Bay leaf- 1
  • Salt- as per taste
  • Oil- 2tbsp
  • Coriander leaves- 2tbsp (chopped)

Procedure

1. Heat oil in a pan and add cumin seeds, bay leaf to it. Fry for a minute.
2. Then add the chopped garlic, ginger paste and saute for a few seconds.
3. Add in the chopped onions and fry till they turn golden brown on medium flame.
4. Then add the diced bottle gourd pieces to it and mix well.
5. Add salt, turmeric powder, red chilli powder, green chillies, cumin powder, coriander powder, amchoor powder and cook for 4-5 minutes.
6. Now add the crushed kasoori methi and garam masala powder to the curry and mix well.
7. Lower the heat and cover the pan with a lid.
8. Do not add extra water as the bottle gourd will give out its water.
9. Cook for 5-6 minutes and keep stirring the curry at regular intervals.
10. Once done, remove the lid and check if the lauki is completely cooked.
11. Once the curry is cooked, switch off the flame and garnish it with chopped coriander leaves.

Delicious lauki ki sookhi sabji is ready to be served. Enjoy this special summer delight with rotis or rice.
