Gujarati Style Bhindi Masala

Gujarati cuisine is quite famous for its variety of snacks like dhokla, khakra, handvi, thepla etc. The recipes for each of them is equally unique as the names. Gujarati style bhindi masala is also one of the special vegetarian delights from the colourful state of Gujarat. There are a number of recipes for bhindi masala throughout the country. But Gujarati style bhindi masala is one of its kind. This recipe is prepared using very less spices yet the taste will make you fall in love with this squishy vegetable.

So, try out the unique and delicious recipe of Gujarati style bhindi masala to enjoy a simple and delicious vegetarian meal at home.

Ingredients

  • Tender bhindi/okra- 500gms
  • Potatoes- 2
  • Ginger-garlic paste- 1tbsp
  • Green chilli paste- 1tsp
  • Lemon juice- 2tsp
  • Turmeric powder- 1tsp
  • Cumin powder- 1tsp
  • Coriander powder- 1tsp
  • Mustard seeds- 1tsp
  • Fenugreek seeds- 1tsp
  • Salt -as per taste
  • Oil- 1tbsp

Procedure

  1. Wash the bhindi with water, pat dry with a towel and then chop them into medium size pieces.
  2. Cut the potatoes into diced pieces and keep it aside.
  3. Mix ginger-garlic paste, green chilli paste, turmeric powder, lemon juice and one teaspoon of oil together in a bowl. Keep this masala paste aside.
  4. Heat oil in a pan and add mustard seeds and fenugreek seeds. Allow it to splutter.
  5. Add the potatoes and the bhindi. Mix well and cook for about 5-6 minutes till the moisture in the bhindi goes off.
  6. Add chilli powder, cumin powder, coriander powder and salt. Mix well.
  7. Now add the masala paste and stir fry it for about 5-6 minutes on medium flame.
  8. Cover the pan with a lid for about 2 minutes and cook on low flame.
  9. Once done, switch off the flame and serve.

Gujarati style bhindi masala is ready to be served. Enjoy with hot rotis or parathas.
