Egg Curry With Mint Recipe
Egg curry is one of the best side dishes prepared with the superfood. Boiled eggs are fired and then mixed with the curry that is rich in spices and aroma. The taste and aroma of fried eggs makes the curry taste all the more delicious.
The basic ingredients required to make egg curry are; onions, garlic, eggs and the regular spices namely turmeric powder, red chilli powder to name a few. If you love egg curry and want to experiment with the side dish, add some mint. The mint leaves are grounded with the onions and garlic. Ingredients
- Eggs- 3-4 (hard boiled)
- Onions- 2
- Garlic- 4-5 pods
- Green chillies- 2-3
- Turmeric Powder- 1tsp
- Red chilli powder- 1tsp
- Mint leaves- 1 sprig
- Coriander leaves 1 sprig
- Cumin seeds- 1tsp
- Tomato sauce- 1tsp
- Water- ½ cup
- Salt- as per taste
- Garam masala- a pinch
- Oil- 3tbsp
Procedure
- Peel the onions and cut them into 4 halves. In a grinder, ground onion, mint leaves, garlic, green chillies and coriander leaves. Make a paste and keep it aside.
- Peel the eggs. Heat oil in a frying pan and fry the eggs gently till they turn little brown. Strain and keep aside.
- Reduce the oil in the pan with the help of a spoon to half. Now add cumin seeds into the pan.
- When the seeds start to splutter, add the grounded paste and saute on a medium flame for 5-6 minutes on a medium flame.
- Once the paste looks cooked, add salt, turmeric powder, red chilli powder and garam masala.
- Mix well and then add tomato sauce. Pour water and bring it to boil.
- After the gravy thickens, add the fried eggs and gently mix. Turn off the flame.
Egg curry with mint is ready to eat. Serve this side dish hot with rice.
