Aloo Methi: Indian Side Dish

Serves: 3
Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients

  • Aloo- 5-6 (boiled, peeled and cut into medium sized pieces)
  • Methi leaves- 1 cup (washed and chopped finely)
  • Garlic- 2 pods (chopped)
  • Turmeric powder- 1tsp
  • Red chilli powder- 1tsp
  • Cumin seeds- 1tsp
  • Mustard seeds- ½ tsp
  • Salt- as per taste
  • Oil- 2tbsp

Procedure

  • Wash the methi leaves and sprinkle salt. Keep aside for an hour. This reduces the bitterness of the leaves.
  • Heat oil in a frying pan. Season with cumin and mustard seeds.
  • When the seeds start to splutter, add the boiled potatoes and mix well. Cook for 2 minutes on a medium flame.
  • Squeeze out the methi leaves and then add into the pan. Mix well and cook on a medium flame for another minute.
  • Add salt, turmeric powder, red chilli powder and mix well. Cook for another 10-15 minutes on a medium flame.

Aloo methi ki sabzi is ready. Serve it hot with roties.
