Delicious Achari Gobhi Recipe

Delicious Achari Gobhi Recipe

Ingredients

  • Gobhi /Cauliflower- 3 cups (cut into small florets)
  • Oil- 4tbsp
  • Onion- 1 cup
  • Ginger garlic paste- 1tsp
  • Tomato puree- 2tbsp
  • Curd- 2tbsp
  • Achari masala- 1tbsp
  • Red chili powder- ½ tsp
  • Salt to taste
  • Lemon juice- 1tsp
  • Amchoor powder- ½ tsp
  • Fresh coriander- 2tbsp (chopped)

For Achari Masala

  • Dry red chilies- 16-18
  • Coriander seeds- 1tbsp
  • Onion seeds/kalonji- 3tsp
  • Fennel seeds /saunf- 6tbsp
  • Mustard seeds / rai- 6tbsp
  • Fenugreek/methi seeds- 2tsp
  • Cumin seeds- 6tsp
  • Salt- 6tbsp
  • Turmeric powder- 3tbsp
  • Asafoetida / heeng - ½ tsp
  • Dry mango powder/amchoor- 3tsp

Procedure

For Achari Masala

  1. Dry roast dry red chilies, coriander seeds, onion seeds, fennel seeds, mustard seeds and cumin till slightly browned and fragrant.
  2. Cool for 5 minutes.
  3. Blend in a blender with rest of the ingredients to make a coarse powder.
  4. Store in an airtight container for up to a month in a cool and dry place or refrigerate it for about 2 months.

For Achari Gobhi

  1. Add 2 tbsp oil in a pan. Add the gobhi florets and fry till slightly browned.
  2. Remove from the pan.
  3. Heat the pan again.
  4. Add the remaining 2 tbsp oil.
  5. Add onion and fry till slightly browned.
  6. Add ginger garlic paste and fry for a minute.
  7. Add tomato puree and curd. Fry for a minute.
  8. Add achari masala, red chili powder, salt and half cup of water.
  9. Fry for a minute.
  10. Add fried gobhi.
  11. Cover and cook for 2 minutes.
  12. Add lemon juice and amchoor powder.
  13. Mix well. Garnish with fresh coriander.
  14. Serve hot with phulka and dal rice.
