Vegetable Khichdi Recipe For Kids
Does your child enjoy eating vegetables? If he/she does not, then this is one the most easy recipes you can make for your little ones for dinner. Khichdi, which is a dish made solely out of of rice and lentils, can now be made into something much more tasty if you add veggies.
Indian spices are the main ingredients used to make the vegetable khichdi all the more appetising. To make this simple rice recipe, all you need is the list of your kid's favourite vegetables and you are ready to go.

Ingredients
- Rice - 1 cup
- Moong dal - 1/2 cup
- Potato - 2 (chopped)
- Capsicum - 1 (chopped)
- Green Peas - 1/2 cup (peeled)
- Green chili - 2 (chopped)
- Ginger - 1 inch long piece (grated)
- Ghee - 1 or 2 tsp
- Hing - 1-2 pinch
- Cumin seeds - 1/2 tbsp
- Black pepper - 4-6
- Cloves - 4
- Turmeric powder - 1/6 tsp
- Salt - according to the taste
- Coriander leaves - 1 tsp (chopped)
Procedure
- You need to first wash the rice and the dal together with water. Let both of these ingredients soak in the water for half an hour or so.
- Now in a cooker, heat the ghee and wait for it to get hot. When hot, add in the cumin seeds and the hing. Wait for the two to splutter in the ghee and turn into a golden brown in colour.
- Now add in the black pepper, cloves, turmeric powder, green chilli and ginger to the cooker. Fry all these ingredients well with the ghee.
- When the ingredients are well cooked, add in the chopped vegetables. You need to now cook the vegetables in the masala for about 3 minutes using a flat spoon.
- When the vegetables are cooked, add to the pan, the dal and the rice which was soaking. Cook all of these ingredients together over a medium flame.
- When cooked, add in the water to the cooker. Add in the salt as well and give it a final stir with a spatula.
- Close the lid of the cooker and allow it to pressure cook for 2 whistles.
- After cooking it, switch off the flame and allow the steam to come out.
- Open the lid of the pressure cooker and gently stir it.
You can enjoy this yummy dish with raita. Make sure you eat this yummy vegetable khichdi hot. Garnish your khichdi with coriander leaves.
