Carrot Rice Recipe For Lunch

Serves: 4

Cooking Time: 25 minutes

Ingredients

  • Rice- 2 cups (boiled)
  • Carrots- 4-5 (cut in julienne shape)
  • Onions- 2 (sliced)
  • Capsicum- 1 (chopped)
  • Green chillies- 3-4 (slit)
  • Garlic- 3 (minced or crushed)
  • Ginger- ½ inch (chopped finely)
  • Turmeric powder- 1tsp
  • Red chilli powder- 1tsp
  • Pulao masala- ½ tsp
  • Black pepper- ½ tsp (grounded)
  • Cumin seeds- ½ tsp
  • Salt- as per taste
  • Oil- 2tbsp
  • Coriander leaves- 1tbsp (chopped)

Procedure

  • Heat oil in a deep bottomed frying pan. When it starts steaming, season with cumin seeds.
  • Add onion and saute for a minute on a medium flame. Now add ginger, garlic, carrot and capsicum. Sprinkle salt and turmeric powder.
  • Mix well and saute on a low flame for 4-5 minutes till the vegetables become a little tender.
  • Now add the masalas namely, black pepper, red chilli powder, pulao masala. Also add the slit green chillies. Mix well.
  • Slowly add the boiled rice and mix well so that the masala is spread evenly with the rice. Cook on a medium flame for a minute more.

Carrot rice recipe is ready to eat. Garnish with chopped coriander leaves and serve it hot with raita or salad.
