Butter and Capsicum Rice Recipe

Today, we would like to share a new rice recipe - butter and capsicum rice. It is a delicious recipe that has a strong and special aroma. The dish is crunchy as it has capsicum and cashew nuts, which makes it a delicious Indian dish. Moreover, it is easy to prepare as well. Take a look.

Butter and Capsicum Rice Recipe:

Butter and Capsicum Rice Recipe

Serves: 3-4
Preparation time: 10 minutes
Cooking time: 20-25 minutes

Ingredients

  1. Rice- 2 cups (cooked and non-sticky)
  2. Capsicum- 1 (chopped)
  3. Green chillies paste- 1tsp
  4. Mustard seeds- ½ tsp
  5. Cumin seeds- ½ tsp
  6. Cashew nuts- 1tbsp (broken and roasted in ghee)
  7. Black pepper powder- ½ tsp
  8. Cinnamon- 1 small stick
  9. Grated coconut- 1tsp (optional)
  10. Salt- as per taste
  11. Butter- 1tbsp
  12. Ghee- ½ tsp

Procedure

  1. Melt ghee and butter in a wok. When it melts, add cumin and mustard seeds. Allow it to splutter.
  2. Add the cinnamon stick and green chillies paste and sauté on low flame for a few seconds.
  3. Now add the chopped capsicum and cook on a low flame for about 4 minutes. Do not over cook them. The capsicum should become tender not burnt.
  4. Sprinkle salt and black pepper powder. Mix well.
  5. Add the cooked rice and roasted cashew nuts. Mix well so that all ingredients are evenly absorbed.
  6. Cook for another 2 minutes. Add grated coconut and mix with rice.
  7. Turn off the flame.
