Masoor Dal Vegetable Recipe

Dal is an important part of everyday Indian meals. Thankfully, we know about various techniques and recipes to cook dal. Otherwise eating the same dal everyday would have been a boring affair. Apart from being a tasty item, dal is also a rich source of protein. So, it is vitally important that we include dal in our daily diet.

To add a twist to our regular dal and to make it even more healthy, here we have a simple dal vegetable recipe for you. In this recipe mixed vegetables have been combined with the regular masoor dal or the split red lentils. The vegetables add a unique and lip-smacking taste to the dal recipe. It is also a quick option if you are in a hurry to prepare your lunch.

Ingredients

  • Masoor dal (split red lentils)- 1 cup
  • Onion- 1 (chopped)
  • Cauliflower- 1 (small, diced)
  • Potatoes- 2 (medium, diced)
  • Green peas- ½ cup
  • French beans- 5-6 (chopped)
  • Carrots- 2 (chopped)
  • Tomato- 1 (chopped)
  • Ginger- 1 inch piece (grated)
  • Garlic- 5-6 cloves (minced)
  • Green chillies- 2 (chopped)
  • Hing (asafoetida)- a pinch
  • Mustard seeds- 1tsp
  • Dry red chillies- 2 (broken)
  • Turmeric powder- 1tsp
  • Red chilli powder- ½ tsp
  • Salt- as per taste
  • Lemon juice- 1tbsp
  • Sugar- ½ tsp
  • Curry leaves- 6-7
  • Coriander leaves- 1tbsp (chopped)
  • Oil- 1tbsp
  • Water- 2 cups

Procedure

  1. Wash the masoor dal properly under running water till the water runs clear. Keep it aside.
  2. Heat oil in a pressure cooker and add mustard seeds, hing, dry red chillies, curry leaves and fry for a minute.
  3. Add chopped onions and fry for about 5-6 minutes on medium flame.
  4. Add ginger, garlic, green chillies and cook for another couple of minutes.
  5. Now add the carrots, cauliflower, potato, French beans, green peas one by one and mix well.
  6. Cook for about 5-6 minutes.
  7. Then add turmeric powder, red chilli powder, salt and cook for 3 minutes.
  8. Add tomatoes and sugar. Mix well and cook for another 2 minutes.
  9. Now add the washed masoor dal and mix well.
  10. Add water, close the lid and cook for about 3-4 whistles on low flame.
  11. Once done, switch off the flame and allow the cooker to cool down.
  12. Once the cooker cools, open the lid and add lemon juice and mix well.
  13. Garnish the masoor dal vegetable recipe with chopped coriander leaves and serve hot.
