Sev Tamater Ki Sabji For Shivratri

Sev tamater ki sabji is originally a Gujrati recipe. It is popular among Gurjati Jains who do not add onions and garlic to their food. The original name for this recipe is sev tamta nu shaak. This recipe can be ideal for Shivratri because it has no onions and garlic in it. It is infact a curry made solely with tomatoes and garnished with sev.

Sev Tamater Ki Sabji

Serves: 3

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Ingredients

  • Tomatoes- 8 (chopped)
  • Turmeric powder- ½ tsp
  • Red chilli powder- 1tsp
  • Asfoetida (hing)- 1 pinch
  • Cumin seeds- ½ tsp
  • Mustard seeds- ½ tsp
  • Green chillies- 3 (slit)
  • Curry leaves- 4 (chopped)
  • Jaggery- 2 tbsp
  • Rock salt (sanda namak)- as per taste
  • Oil- 1tbsp
  • Sev- 1 cup

Procedure

  1. Heat oil in a pan; season it with cumin seeds, mustard seeds, asafoetida and green chillies.
  2. Then add the tomatoes to the pan.
  3. Sprinkle red chilli powder and turmeric from the top.Add salt so that the tomatoes cook well.
  4. Mix the ingredients of the pan and cook on low flame for 5 minutes.
  5. Mix jiggery in a cup of water and pour it over the melting tomatoes in the pan.
  6. Simmer for 5-7 minutes on a low flame.Add chopped curry leaves before taking the pan off the flame.
  7. Garnish the dish with sev just before serving so that the sev remains crisp.
  8. Sev tamater ki sabki can be enjoyed with vrat ke chawal (fasting rice) or vrat ke parathe (fasting baked breads)
