Sweet Corn Roti Recipe For Breakfast

Preparation Time: 20 minutes
Cooking Time: 25 minutes

Ingredients

All purpose flour - 2 cups
Sweet corn - 2 cups
Onions - 1 nos (chopped)
Potato - 1 nos (sliced)
Coriander leaves - 1 tsp (finely chopped)
Chilli powder - 1 tbsp
Salt to taste
Water to knead the flour

Method

  1. To make the stuffing - Take a tava and heat a spoon of oil, drop in the onions and fry them till they turn pickish in colour. Drop in th potato and let it boil
  2. After the potatoes have boiled, add in the sweet corn and the chilli powder, chopped corriander leaves and salt.
  3. Let the ingredients cook well for 15 minutes and keep aside.
  4. You first need to mix all the flour with water to make a dough. Make the dough and keep it aside.
  5. Take a flat pan, spread half a tablespoon of oil and sprinkle water on the pan.
  6. Now take a medium size dough and spread a circular motion on the pan with the help of your fingers.
  7. The cooked stuffing needs to be palced in the center of the circular roti. Place another roti over the top and press it gently together.
  8. To stick the sides of the roti, a little oil can be used.
  9. Now switch the stove and let it be on a medium flame.
  10. Place the roti on the hot pan and sprinkle a dash of oil in the the center of the roti and spread it around. Let the roti fry till golden brown.
  11. Flip the roti on both the sides till cooked.
  12. You need to fry the roti carefully so that it does not open up.
  13. While frying the corn roti, pat the roti gently so that its sticks while getting fried.
