Lemon Oats Recipe For Diabetics

Serves: 3
Preparation Time: 10 minutes
Cooking Time: 15 minutes

Ingredients

  • Oats- 2 cups
  • Water- 1 cup
  • Lemon Juice- 2tsp
  • Turmeric Powder- a pinch
  • Peanuts- 1tbsp (roasted)
  • Mustard seeds- ½ tbsp
  • Gram Dal- 1tbsp
  • Bengal gram- 1tbsp
  • Green Chillies- 2 (sliced)
  • Red Chillies- 1 (sliced)
  • Curry Leaves- 10 nos
  • Asafoetida- ½ tbsp
  • Oil or frying
  • Salt to taste

Procedure

  1. To make the yummy lemon oats you first need to heat the required oil in a pan. When the oil is hot, add in the mustard seeds and let it splatter.
  2. Now add in the dals and allow it cook gently over a medium flame. Wait for the dals to turn to a slight golden red in colour.
  3. Now add in the green chillies, the red chillies and the curry leaves to the ingredients in the pan. Stir them gently over a medium flame and gently sprinkle the asafoetida into the pan.
  4. Now add in the turmeric powder to the dish, water and salt. When the contents start to boil, add in the oats and mix in the ingredients gently.
  5. Cook the oats on a medium flame and mix it gently using a flat spoon.
  6. When the oats is slightly cooked, pour in the lemon juice over it and let it cook for about 5 minutes or so.
  7. When the oats is done, garnish it with the roasted peanuts.

Your diabetic lemon oats is now ready to eat. You can enjoy this yummy breakfast recipe with yogurt or pickle.
