Crunchy Vegetable Dosa For Breakfast

How do you actually start your day? It must be with something that tastes good, is filling and also gives you a healthy start to the day. It is quite simple, have a crunchy vegetable dosa for breakfast. The vegetable dosa recipe is very simple and yet, you will be able to find a perfectly balanced breakfast in this dish. Having dosa for breakfast is a great idea provided you have the batter ready.

And for vegetable dosa, you need to have all the chopped vegetables ready along with the batter. If you want make things easier for yourself on a busy morning, you should just boil the chopped vegetables and keep them in a closed container in your refrigerator. Then you can make vegetable dosas in just 5 minutes for your breakfast.

The USP of vegetable dosas is that you do not have to make sambar or a filling for it. You can have it just like that. You can even roll it up like a wrap and have it on the go with ketchup.

Crunchy Vegetable Dosa

Serves: 1

Preparation time: 15 minutes

Cooking Time: 5 minutes

Ingredients

  1. Dosa batter- 1 cup
  2. Mustard seeds- 1/2 tsp
  3. Carrots- 50 grams (chopped)
  4. Bell peppers- 1/2 (chopped)
  5. Peas- handful
  6. Tomato- 1/2 (chopped)
  7. Green chillies- 2 (chopped)
  8. Oil- 1tsp
  9. Coriander leaves- 2 stalks (chopped)
  10. Salt- as per taste

Procedure

  • Boil the vegetables; carrots, peas and bell peppers in a pressure cooker for the duration of 1 whistle or 5-7 minutes on a low flame.
  • Drain away the stock and store the vegetables.
  • Take a 1/2 tsp oil on a pan and temper it with mustard seeds and green chillies.
  • Add the vegetables and saute for 2-3 minutes on medium flame.
  • Add this to the dosa batter. Also add tomatoes and coriander leaves to the batter and mix it up.
  • Then spread oil on a flat dosa pan.
  • Then it gets heated, up a scoop of dosa batter on the pan.
  • Once the doas gets crisp, you can fold it into half and remove it from the pan.

You can enjoy vegetable dosa with ketchup or chutney. And for a proper South Indian breakfast, you can have some sambar as well.
