Corn Pancake Recipe For Breakfast

Here is the corn pancake recipe for you to try out for breakfast:

Ingredients

  • Flour - 1 cup
  • Baking Powder - 4 tbsp
  • Sweet Corn - 3 cups
  • Sugar - 2 tbsp
  • Milk - ¾ cup
  • Eggs - 2
  • Oil- 3 tbsp
  • Butter - 2 tbsp

Procedure

  1. Add the flour, baking powder, sugar and salt to a large bowl.
  2. Using the help of a whisker, mix all the above ingredients well.
  3. In a mixer, drop in the cleaned corn and add in the milk too. Now grind the two ingredients together for a minute or so. Blend the ingredients well, so that it forms into a puree.
  4. After the puree is made, sieve the corn puree using a muslin cloth. Remove the husk which is left behind and throw it into the waste bin.
  5. To this clear corn puree, add in the eggs, oil and the butter. Mix the three ingredients well with the corn puree to make a fine paste.
  6. When the batter is ready, keep it aside for 10 minutes to soak.
  7. After 10 minutes, place a flat pan on a medium flame and a drop of oil around the empty pan.
  8. Wait for the oil to get a little hot. When the oil is hot, using a round spoon, pour in the batter to the middle of the pan and form a circle.
  9. Make sure that the batter is nice and thick in the centre of the pan.
  10. Let the pancake cook for about 2 to 3 minutes and using a spatula flip the pancake on the other side.
  11. Wait for the pancake to turn golden brown on both the sides.
  12. Once cooked, place the ready pancakes onto a flat serving plate and spread a little maple sauce over it.

Your corn pancakes are now ready to eat. You can also add boiled corn to the pancakes when you are frying them on the pan. Serve hot and enjoy.
