Roscon De Reyes Recipe -
1. 4 1/2 cups flour (unbleached and sifted)
2. 25 g yeast
3. 3/4 cup mixed warm milk and water
4. 6 tsp butter (unsalted)
5. 6 tsp sugar
6. 1 grated rind of lemon and orange
7. 2 eggs
8. 1 tsp brandy
9. 1 tsp water
10. 1 egg white (beaten)
11. Pinch of salt
12. Fig fruit, quinces, cherries and candied fruits (for decoration)
1.Preheat oven to 350F degrees.
2.Mix flour with a pinch of salt in a bowl.
3.In a separate bowl mix yeast with water and milk and add the mixture to the flour mixture, blend well to make a thick batter. Set aside the batter for 15 minutes.
4.Mix butter and sugar thoroughly until it is smooth and creamy.
5.To the flour mixture, add orange and lemon rinds, eggs, brandy and water. Mix well until the dough turns sticky.
6.After kneading the mixture add sugar butter mixture into the dough. Set aside the dough in a dry place for two hours.
7.Grease the baking sheet or line in parchment paper.
8.Once dough has doubled, knead it again for a few minutes and roll it into a sausage shape. Place the roll on the greased baking sheet connecting the ends of the dough (into a ring) .
9.Now it is the time to hide a kidney bean into the dough so tuck the bean and leave it for 2 hours.
10.For decoration, sprinkle fruit pieces and bake the dough for half an hour or until golden brown. Then leave the cake to set. Tasty Roscon De Reyes ready to serve.
