Carrot Cake Recipe - National Cake Day Special

With November 26th being the “National Cake Day", celebrate the day with this special cake recipe. Get over with the usual sponge cakes and chocolate cakes and make this day memorable with our healthy, colorful and nutritious cake. Our special recipe for the day is the "Carrot cake".

Carrots are the most tasty and colorful vegetables that give an exotic taste to the cake. Carrots soften and make the cake denser. They also help in enhancing the appearance of the cake. Take a look on how to make the exotic Carrot cake recipe for the happy celebration.

Carrot Cake Recipe -

Ingredients:

1. 2-3 cups Carrots (finely grated)

2. 1-2 cups Flour (any flour)

3. Pinch of Baking Soda

4. 2 tsp Cinnamon (finely ground)

5. 1 cup Chopped Walnuts (pecans can also be used instead )

6. 3-4 Eggs (well beaten)

7. Pinch of Salt

8. 2 Cups sugar (preferably white)

9. 1 tsp Nutmeg (optional)

10. 1cup Oil (preferably Canola or any flavorless vegetable oil)

11. 2 tsp Vanilla extract (optional)

Method:

1.Preheat oven to 350 degrees F. Line a parchment paper on cake pan base and smear butter on the paper so that the baked cake can easily be taken out of the pan.

2.Mix baking soda, nutmeg, cinnamon and salt to the already sieved flour.

3.Toast the walnuts or pecans for 9 minutes and add the nuts to the finely grated Carrots, sugar, oil and beaten eggs. Optional vanilla extract and oil mixture can also be added to the mixture.

4.Add the flour mixture to the above carrot mixture.

5.Pour the batter into a pan. Insert a toothpick in the batter. This tip will help you know if the cake is baked. When the cake bakes the inserted toothpick comes out of the cake clean.

6.Cook the mixture at 350 degree F for about 10-15 minutes.

7.If you want the cake look orange other than the natural cake color, add a food color of choice to the cake.

8.Garnish or frost it with melted cheese or with remaining walnuts and serve. This Carrot cake recipe serves 12-15.
