Vegetarian broccoli soup recipe:

Ingredients

500 gms broccoli
1 onion finely chopped
4 garlic cloves
1 cup low fat milk/cream
water/vegetable stock
salt
black pepper
butter

Directions to make broccoli soup recipe:

1. Wash and cut the broccoli into small florets. Soak in salted water for 15-20 minutes and then drain.

2. Heat butter in a saucepan and add broccoli florets, garlic cloves and chopped onions. Add salt and black pepper and cook for 6-8 minutes, till the onion becomes translucent.

3. Add water/vegetable stock in the saucepan and stir well. Bring it to boil and after 5-10 minutes, add low fat milk or cream. Cook till the solution becomes thick like a puree. Take it off flame in serve in soup bowls.

Broccoli soup is ready to eat. Enjoy the easy to make vegetarian soup with bread sticks!
