Barley Vegetable Soup For Xmas

Ingredients:
1.Oil - 21/2 tsp
2.Onions (finely chopped) - 2 tsp
3.Garlic or spring onions (finely chopped) - 1/2 tsp
4.Vegetable stock (boiled vegetable water) - 3 1/2 cups
5.Carrots (finely chopped) - 2 tbsp
6.Tomato puree - 3 tsp
7.Tomatoes (chopped) 1 tsp
8.Barley (cooked) 2 tsp
9.3 tbsp cooked macaroni
10.Spinach (finely chopped) - 1/2 cup
11.Pepper (powder) 1/2 tsp
12.Salt to taste
Method:
1.Heat the pan and add 2 teaspoons of oil, after the oil is hot add onions and garlic and fry on a medium flame for 2 minutes.
2.Pour the vegetable stock to the pan and add chopped carrots, tomato puree, tomatoes and salt, stir well until the soup boils.
3.Add cooked barley and stir well for 2 minutes.
4.Remove soup from flame and add pepper powder and mix well. Tasty barley vegetable soup recipe ready to serve. Serve the soup hot garnishing with fresh cream or grated cheese.
