Easy Butternut Squash Soup For Summers

This summer get the aroma of the "Australian Pumpkin", we are describing the Butternut Squash. Although it is a popular winter squash, its' sweet and nutty taste can also be savored in summer too. Butternut pumpkins is a low fat vegetable which is also a rich source of vitamins, fiber and folate. Butternut Squash Soup -

Ingredients:

1. 1 butternut squash (peeled and seeded)
2. 2 tablespoons butter
3. 1 medium onion, chopped
4. 2-3 garlic pods
5. 6 cups chicken stock (without salt)
6. Nutmeg spice
7. Salt and black pepper powder

Garnish:
1. 2 tsps frsh cream (optional)
2. 2-3 oregano leaves

Butternut Squash Soup Preparation:

1. Make a puree of the butternut chunks.
2. In a pot, fry the chopped onions and garlic pods for atleast 3-4 minutes.
3. Add the puree and chicken stock into the pot and mix well.
4. After the soup is brought to boil, add salt, nutmeg spice and pepper powder. Stir well.
5. Serve the soup hot or chilled garnishing with fresh cream and oregano.
