This mutton recipe has a slightly whitish-yellow colour due to addition of yogurt and cream to it. The yellowish tinge is provided by the saffron which also adds a different flavour to this dish. Ingredients

  • Mutton- 500gms (boneless)
  • Onions- 2 (large, chopped)
  • Onion paste- 2tbsp
  • Ginger-garlic paste- 1tbsp
  • Saffron- a pinch
  • Milk- 1tbsp
  • Salt- as per taste
  • Fresh cream- 1cup
  • Almond paste- 1tbsp
  • Yogurt- ½ cup
  • Coriander powder- 1tsp
  • Black pepper powder- 2tsp
  • Garam masala- 1tsp
  • Oil- 2tbsp
  • Warm water- 1 cup
  • Coriander leaves- 2tbsp (chopped, for garnish)

Procedure

  1. Soak the saffron in milk for about half an hour.
  2. Clean and wash the mutton pieces thoroughly.
  3. Marinate the mutton with yogurt, coriander powder, almond paste, onion paste, ginger-garlic paste and salt for about 2 hours.
  4. After two hours, heat oil in a pan. Add chopped onions and fry on a medium flame for about 5 minutes.
  5. Add the marinated mutton pieces and cook for about 15-20 minutes till the moisture dries up and the masala coats the mutton pieces.
  6. Now add pepper powder, garam masala powder, soaked saffron and salt to the mutton. Mix well.
  7. Beat the fresh cream in a bowl with a spoon and pour it into the pan and mix well, stirring continuously.
  8. Add warm water, cover and cook for about 30 minutes on a low flame. Keep stirring at regular intervals.
  9. Open the lid and check if the mutton is completely cooked or not. Use a fork to check.
  10. Once done, switch off the flame and garnish the shahi mutton korma with chopped coriander leaves.
