Mutton Rogan Josh: A Kashmiri Delight

Mutton rogan josh is a popular dish among non-vegetarian foodies. This recipe originally came from the Kashmiri Brahmins. However the original recipe has gone through a lot of changes and improvisations with the varying tastes and preferences of people. Even within Kashmir itself, the recipe varies according to the regions and traditions.

The authentic version of mutton rogan josh was prepared without onions and garlic. The special flavour to the curry was added by asafoetida and a special herb called 'Ratanjot'. But since it is not easy to find the herb everywhere, this ingredient has been omitted now. Instead Kashmri red chilly powder is used to get the red colour. But the mouthwatering and delectable taste of the recipe remains intact.

Mutton Rogan Josh: A Kashmiri Delight

So here is a simple version of mutton rogan josh for you. Try it at your home and surprise your friends and family with this delicious recipe.

Serves: 3-4

Preparation time: 2 hours

Cooking time: 40 minutes

Ingredients

  • Mutton- 1 kg
  • Onions- 4 (thinly sliced)
  • Ginger-garlic paste- 2tbsp
  • Green cardamoms- 5
  • Bay leaves- 2
  • Mace- 2
  • Cloves- 6
  • Black peppercorns- 1tsp
  • Hing(asafoetida)- ½ tsp
  • Saunf (fennel) powder- 1tbsp
  • Dry ginger powder- 1tbsp
  • Kashmiri red chilly powder- 2tsp
  • Coriander powder- 1tbsp
  • Yogurt- 1 cup
  • Mustard oil- 2tbsp
  • Warm water- 4 cups
  • Salt- as per taste

Procedure

  1. Wash and clean the mutton. Marinate it with yogurt, 1tsp of red chilly powder and salt. Keep it aside for 2 hours.
  2. After 2 hours, heat mustard oil in a pan. Add all the whole spices like bay leaves, cardamoms, cloves, mace, peppercorns along with hing (asafoetida). Fry for 2 minutes.
  3. Now add the sliced onions and fry till they become light brown.
  4. Then add ginger-garlic paste and saute for 2 minutes.
  5. Now add the marinated mutton pieces, red chilly powder, coriander powder and fennel powder. Fry for 5-6 minutes.
  6. Add warm water, salt and dry ginger powder. Mix well and cook for another 15 minutes.
  7. Now cover the pan and cook for 25-30 minutes until the mutton is completely cooked.
  8. Switch off the flame and check the mutton with a knife or a fork.
  9. Once done, serve mutton rogan josh with steamed rice or pulao.
