Spicy Chicken Handi Recipe With Video

Chicken handi is a recipe that has its roots deeply engrossed in tradition. This special chicken curry is cooked in the country style in a 'handi' or large earthen pot over wood and coal fire. Now it is not possible for you to cook in a handi in your kitchen. But that should not stop you from trying the chicken handi recipe. You can always cook chicken handi in a metallic pot of iron and copper in your very own kitchen. The basic idea is to cook this dish slowly over a low flame.

The chicken handi recipe is very similar to any other spicy chicken curry. What makes the difference to the taste is a blend of country spices and of course, the style of cooking. Although the recipe is easy to follow, it would be much better to try out the recipe with a bit of help. Ingredients

  1. Chicken- 500 grams
  2. Tomatoes- 3 tomatoes (finely chopped)
  3. Onions- 2 (thinly sliced)
  4. Ginger-garlic paste- 2tbsp
  5. Cumin powder- 1tsp
  6. Chilli powder- 1tsp
  7. Turmeric- 1 pinch
  8. Black pepper- 1tsp
  9. Coriander powder- 1tsp
  10. Salt- as per taste
  11. Green chillies- 3 (chopped finely)
  12. Curd- 100 grams
  13. Ghee- 4tbsp

Procedure

  • Heat the ghee in a metal handi (steel pot with copper underneath). Add the chicken pieces to the handi and braise in the ghee for 5-6 minutes.
  • Remove the chicken pieces after 5 minutes and keep them aside.
  • Now add the onions to the handi and saute until the onions are golden brown in colour. Keep the flame low.
  • Then add the ginger garlic paste, green chillies and tomatoes to the handi. Mix it up, cover and cook on a low flame for 20-25 minutes.
  • Then remove the lid and add all the spices namely, chilli, cumin, coriander, black pepper and salt.
  • Also add curd and mix to get a thick gravy.
  • Then add the braised chicken pieces to the simmering gravy. Cover and cook it for another 20 minutes on a low flame.
  • Your chicken handi is ready, you can garnish it with green chillies and chopped coriander leaves.

You can serve chicken handi with hot pulkas or tandoori rotis.
