Prime Rib Roast Recipe -

Ingredients:

1.A three-rib prime-rib roast (cut,trimmed and tied) (Note that you will not overcook the expensive piece of beef)

2.1 Tsp pepper powder (freshly ground)

3.Salt to taste

4.3 short ribs (tied)

5.1 1/2 cups red wine (dry)

Method:

1.For an even cooking of the roast, first ensure that it is left at room temperature for a few hours before roasting it in the oven again.

2.Preheat the oven to 450 degrees F.

3.Set the oven rack at lower level. Smear the roast all over with salt and pepper (spices of choice).

4.Transfer the roast to a big metallic pan. Add some oil at the sides of the roast for cooking. Arrange short ribs in the pan.

5.Cook the roast in pan for 25 minutes.

6.Reduce the oven temperature to 325 degrees F and cook for another 1 an a half hours.

7.Now, transfer the roast from the pan to the platter and cook the roast in the oven at 425 degrees until crust gets soggy.

8.Remove the excess fat from the platter and set aside the roast to cool.

9.For the Yorkshire Pudding, place the roasting pan over medium heat and add red wine and the remaining spices. Stir until reduced by half for about 10 minutes and strain it into bowl and store warm in an air tight container. Prime rib roast ready to serve.
