Iron-Rich Eggplant Omelette For Breakfast

This lip-smacking brinjal omelette is easy to prepare and more importantly your little ones will totally enjoy it. Iron-Rich Brinjal Omelette For Breakfast

So, what are you waiting for? Here is how you can make this iron-rich brinjal omelette for breakfast:

Serves: 3
Preparation Time: 15 minutes
Cooking Time: 10 minutes

Ingredients

  • Brinjal - 2 (sliced)
  • Eggs - 4 (beaten)
  • Onion - 1 (minced)
  • Tomato - 1 (diced)
  • Pepper - 1 tsp
  • Oil - 2 tsp
  • Salt to taste

Procedure

  1. Take a pan and allow it to get hot over a medium flame.
  2. When the pan is a little hot, add a teaspoon of oil.
  3. When the oil is hot, add to the pan the minced onions. Over the medium flame, stir the onions and allow it to fry in the oil. When the onions begin to turn a little golden in colour, add the tomatoes.
  4. Fry the tomatoes well with the onions and let it cook for about 2 minutes.
  5. Now add to the pan, the sliced brinjal and fry it along with the other two vegetables. Let it cook for a 5 minutes over a now low flame.
  6. When the brinjal is a little soft and cooked well, sprinkle the pepper and the salt to the dish.
  7. Mix all the ingredients well using a flat spoon. When the brinjal is fully cooked, switch off the flame.
  8. In another flat pan, pour a teaspoon of oil and drop in the beaten eggs to make the omelette.
  9. Spread the beaten egg over the pan, nice and thick. Allow the egg to cook well over the low flame.
  10. When the egg is cooked, add the brinjal filling in the center of the omelette and fold the omelette into half.
  11. Keep pressing the omelette gently with the flat spoon till the brinjal filling sets in.
  12. After 2 minutes of frying, switch the flame off.

Your brinjal/eggplant omelette is now ready to eat. You can enjoy this yummy iron-rich breakfast with a dash of ketchup.
